20 Oct Charcoal Grilled Pork Cheeks with Tender Green Sprouts Salad

Ingredients (4 Portions):
– 8 Pork Cheeks
– 1 Lemon
– Extra virgin olive oil
– Tender green sprouts (your choice)
– Vinegar of Modena
1º – Trim the cheeks of all excess fat and white membranes. Make a few 5mm deep cuts in the cheeks, forming a grid-like pattern. Season the cheeks with salt and pepper..
2º – Place the cheeks on the frying pan and grill to taste.
3º – Make a vinaigrette with the olive oil, salt and Modena vinegar. Dress the tender green sprouts with the vinaigrette.
4º – Plate and serve the cheeks with your favorite sauce. Perrins, HP, Tabaso, Aioli…
