This César Nieto Ibérico Cebo de Campo Ham is obtained as of selected Ibérico Pig crossbreads, reaching up to 50% of Ibérico Breed in its genetics. The drifts are fed grass and other natural resources that they find themselves when free-grazing in our estate “Las Viñas”, to be found on the outskirts of Guijuelo and this diet is also complemented with high quality natural grains. 

This richness is fruit of its lengthy curing period (more than 30 months), and the natural diet that the pigs enjoy on our estate, the same in turn complemented with high quality grain. Its colour ranges from dark pink to light pink with abundant fat marbling. The high proportion of oleic acid in its fat also makes it smooth in mouth, while in turn making it light. It also puts forth hues of its natural diet.

The drifts are fed grass and other natural resources that they find themselves when free-grazing in our estate “Las Viñas”, to be found on the outskirts of Guijuelo and this diet is also complemented with high quality natural grains. Its production, made with the hind quarters of the animal is completely traditional, using natural salt from the Torrevieja Salt Lake for the salting process. Guijuelo’s unique micro-climate and its elevation standing at more than a thousand meters over sea level, allows us to use less salt in its production as compared with other areas. Thus our Cebo de Campo Ham also first appears as “sweet” in mouth as is typical in hams cured in Guijuelo.
