The César Nieto 75% Ibérico Breed Ibérico Acorn-Fed Shoulder Ham, with the guaranty of the Guijuelo D.O. seal, offers the same quality as a César Nieto Guijuelo D.O. Acorn-Fed Ham; however, with its own particular nature. Its curing period is proportionally shorter, which in turn makes its flavours and aromas even more intense, perhaps even more so than a ham itself, although with a different range of hues, which is highly appreciated by the public.
The César Nieto Guijuelo D.O. Ibérico Acorn-Fed Shoulder Ham offers all the intense flavour of 75% Ibérico products, which is precisely a result of its genetic purity. The important proportion of oleic acid in its fats makes it both smooth and light, literally “melting” in mouth. It quickly conveys its intense flavour and pleasant aromas to the palate. This organoleptic richness is the result of its Ibérico genetics, its lengthy curing period, surpassing 24 months and the diet of the pigs that is based on acorns.
This César Nieto Guijuelo D.O. Ibérico Acorn-Fed Shoulder Ham is obtained from selected crossbreeding of the Ibérico Pig, reaching 75% Ibérico breed. These pigs exclusively feed on grass and acorns while free-ranging through the Salamanca and Extremadura dehesas (meadowlands). Its production, made with the front quarters of the animal is completely traditional, using natural salt from the Torrevieja Salt Lake for the salting process. Guijuelo’s unique micro-climate and its elevation standing at more than a thousand meters above sea level, allows us to use less salt in its production as compared with other areas. Thus our César Nieto Guijuelo D.O. Ibérico Acorn-Fed Ham first appears as sweet in mouth, which is characteristic of the products cured in Guijuelo.
