The Ibérico Acorn-Fed Vela de Chorizo is the Chorizo’s younger sister, therefore the ingredients and the cuts that are used are likewise very carefully selected. The difference resides in that it is more finely diced and that the casing used is of a smaller caliber. Its curing period is also shorter. This fact does not actually dull its quality, but quite the contrary, turning it into a product with a milder flavour, yet with all the characteristics of a traditional home-made sausage meat.

Curing period: 2-3 months
