The Ibérico Acorn-Fed Vela Blanca or Salchichón is also the younger sister of the Salchichón. Its ingredients and the selection of cuts are also carefully considered. The difference resides in that it is more finely diced and that the casing used is of a smaller caliber. Its curing period is also shorter. This fact does not actually dull its quality, but quite the contrary, turning it into a product with a milder flavour, yet with all the characteristics of a traditional home-made sausage meat.
